Use fresh yeast (I used 2 Red Star packets) Cover the dough for the 1st rising with a damp towel for 1 hour, punch the dough, knead it again, not long this time, maybe 5 min. then divide it in half and place them in 2 well greased bread pans. I did not cover them for the 2nd rising, which took 30 min. Then into the oven they went for 30 min. I rate this a 5!
