My individual "Rocher". A lot of and went into these. Hazelnut dacquoise, Milk chocolate and hazelnut praline layer, Milk chocolate mousse, Milk chocolate and hazelnut coating, Gianduja wire.

Chocolate rich entremet. Layers: Crémeux au chocolat, Chocolate sponge, Nut Dacquoise, Praliné feuilletine. (Pinner´s note: as for this last layer, I always replace the Pailleté Feuilletine w. rice krispies and although hazelnut praline is esy to make, I sometimes replace it w. nutella.)

There are many things that I have to learn, and practice, ^^. Baking is a skill that need to be repeated or we can't make it better.
