There are some things I really enjoy cooking, like fresh wild fish. I adapted this recipe for spring ingredients, like fresh green garlic and green onion from the local market; which have a more vegetal flavor and are very healthy. However, it works just fine with white or red onion and with late-season white garlic. This is an easy recipe, when you put everything in a pan in the oven and wait. Enjoy!
This recipe is one of my regular weeknight recipes, along with veggie-rice and red lentils. It’s basically the same simple principle, only the main ingredient changes. It is a fast dinner recipe, adaptable to a lot of ingredients I have in the fridge, which is great after a busy day at the office.
