It was crazy and the end result was deeply savory and sweet at the same time. It was a process and definitely not an everyday dish but it was super fun to make and it’s fun to push my culinary boundaries a bit. The sacrificial veg was saved for my next soup. This process took hours but it’s not a lot of work if that makes sense. Almost all of the “cooking” is a pot simmering gently on a stove top. Try this one. Another comfort meal while I’m sick. 🦐 Salted Egg and Shrimp Congee Ingredients: Handful of Fresh Shrimp or Prawn 3 Ginger slices 3 Salted Eggs (boiled) Coriander & Spring onion (optional) 2 cups Frozen Cooked Rice Boiling water White pepper Oil Directions: - Remove shrimp heads and peel the shrimp. - Stir fry Shrimp heads with oil and ginger in a pot - Add boiling water and boil 15 minutes - Strain broth or simply remove shrimp heads - Add in the frozen rice and cook for another 15-20 minutes stirring occasionally until desired congee consistency. (Add more water if needed) - Add in the peeled shrimp and cut in the boiled salted eggs. - Stir and serve once shrimp has changed colour. -
