sour cream enchiladas
Fastest-Ever Enchiladas. Alternate even faster sauce: a jar of Alfredo sauce and 1/2 a jar or so of salsa. Adding fresh lime juice and chopped cilantro into the sauce and/or sprinkled on top before serving will add a lot of fresh flavor. 2nd alternative: Cook 2 or 3 # of ground beef. Use half for Lasagna and other half as substitute for chicken in this recipe.
Our Favorite Cheese Enchiladas - 12 - yellow or white corn tortillas 1 – 8oz shredded cheddar cheese (for topping) 1 – 8oz pkg shredded monterey jack cheese (for the filling) 1 – 10 oz can mild enchilada red sauce (I use ortega or old elpaso) 1 – 14 oz can wolf brand chili (no beans) 1 - c chicken broth 1 - heaping T flour 1 - T oil 1 – sm can sliced black olives (opt)
