Rosé petal jam   Ingredients  500 gm rose petals  2 c sugar  4 c water  Juice of 2 lemons  Wash the petals thoroughly. Use petals that are not chemically sprayed. In a bowl and add sugar. Crush the rose petals with sugar. Cover and keep overnight in a cool spot. In a saucepan add rose petals, water, sugar and lemon juice. Simmer for 20 minutes on low heat stirring constantly until the sugar has dissolved. Bring to boil. Boil rapidly for 10 to 15 minutes until the mixture thickens.

Gulkand or rose petal jam is an Indian Ayurvedic preparation that has a whole host of wonderful health benefits apart from being delicious.
