Ingredients:
1 sheet puff pastry
1 lb peaches
1/3 cup sugar
2 tbsp butter, melted
1 tsp vanilla bean paste/extract
Course sugar for sprinkling
Powder sugar for dusting
Vanilla ice- cream for serving
Egg wash:
1 egg + 1 tsp water
1. Wash & slice your peaches and mix them with sugar, melted butter and vanilla and set aside;
2. Lightly roll your puff pastry on a floured surface; add your filling in the centre and optionally arrange them or just spread them; fold the edges and brush eggs; wash & sprinkle coarse sugar;
3. Pop in the freezer for 10 mins to optimize puffing of your dough;
4. Bake in a preheated oven at 400 F for 30 min, broil for 2 mins;
5. Sprinkle powdered sugar, serve with vanilla ice cream and indulge
