Homemade Lemon Vinaigrette Makes: 3/4 cup, enough to dress a salad for 6-8 Ingredients: 3 tablespoons lemon juice 1 teaspoon Dijon mustard 1 teaspoon sugar 1/2 teaspoon coarse salt 6 tablespoons olive oil 2 tablespoons snipped chives Stir: Lemon juice, mustard, sugar and salt into a small bowl. Emulsify: Slowly drizzle in oil, whisking constantly. Chill: Stir in chives. Cover and chill.
I honestly don't make salad very often, unless we're having company, but this looked too delicious to wait. In fact, my husband even ate an entire bowl (he hates salad)-- but with the candied pecans, craisins, feta, and yummy balsamic dressing, this was a gourmet starter. Highly recommend.
