Strawberries and Cream Baked Oatmeal- I used almond milk and walnut oil instead of coconut milk and coconut oil to make it healthier and I wanted a more nutty flavor. I also used a creamy honey instead of agave syrup and this turned out great! I'd like to try it with the coconut milk sometime too (but I have read varying accounts on how healthy coconut oil is).

Recipe: Whole Wheat Couscous with Cherries & Arugula. Delicious! I omitted the celery as I hate it, and used walnut oil and cider vinegar in place of olive oil and red wine vinegar. Also added a tablespoon of agave as I thought the sweetness was missing. Only needed one shallot as well. Top with some shaved Gouda...amazing.
