366K views · 23K reactions | SUMMER KICK-OFF PASTA SALAD ☀️ Today, I wanted to make a light yet flavorful pasta salad for a friend’s BBQ that would pair well with heavy foods like hot dogs and cheeseburgers. With a combination of creamy pearl mozzarella, savory sautéed italian sausage, sautéed asparagus, sweet peas, herby basil and a lemon honey vinaigrette, this pasta salad makes for a delicious side dish. Recipe below! Pasta Salad 12oz mini farfalle pasta 8oz pearl mozzarella balls 3 italian chicken sausages, sliced 1 cup chopped asparagus 1/3 cup sweet peas (typically I’d use frozen but I had a leftover can to use) 2 tablespoons fresh basil, chopped Salt and pepper to taste Dressing 1/4 cup olive oil 2 tbsp lemon juice 1/2 tbsp honey 3 tsp red wine vinegar 1/4 tsp dried basil 1/4 tsp dried oregano 1/4 tsp crushed red pepper flakes Kosher salt and ground black pepper for taste 1) Bring salted water to a boil and cook pasta until al dente (around 8 minutes) 2) In a medium pan, sauté chicken sausage until lightly brown. Remove and place in a small bowl. 3) In the same pan, sauté asparagus for about 5-7 minutes, stirring occasionally. The asparagus should be tender-crisp and still bright green. 4) In a small bowl, whisk together olive oil, honey, lemon, red wine vinegar, dried basil, dried oregano, red pepper flakes, salt and pepper to make the dressing. 5) In a large bowl, add pasta, mozzarella, chicken sausage, asparagus and peas, toss with dressing. 6) Before serving, garnish with basil, salt and pepper. #PastaSaladSundays #ThatCheesePlate | Marissa Mullen | Alan Gogoll · Sunny Side of the Stream
