a pan filled with meat and veggies covered in sauce, garnished with cilantro

Recipe video above. Forget skewers - THIS is how you get a satay fix! This Malaysian Chicken Satay Curry features chicken marinated in a homemade satay seasoning, simmered in a heady peanut satay sauce that's coconuty and heavily seasoned. Truly restaurant quality. Yet -simple. No hunting down unsual ingredients!Spice level: Pretty warm buzz but not that spicy. If concerned, read note 1 & 3 for how to play it safe with the chilli!Adapted from a Satay recipe by a Malaysian chef and the Satay…

two bowls filled with rice, broccoli and chicken

Recipe video above. Big batch stir fry made with chicken and broccoli, and lots and lots of sauce - because broccoli florets hold lots of sauce but I still want some to soak my rice! This sauce uses the minimum ingredients you can get away with but still make something that stacks up to real Chinese take out. Chinese cooking wine (shoaxing wine) is the restaurant secret - just a small splash adds depth of flavour into the sauce.Shortcut using Charlie - see Note 5 (the sauce in this recipe is…

a bowl filled with rice, meat and vegetables

Recipe video above. An exciting way to use ground meat (mince) to make a quick stir fry that taste unbelievable! This is great made with chicken, turkey or pork. It also works with beef though it is better made with "white meats". Serve it over rice or vermicelli noodles to make rice bowls with shredded lettuce, carrots and cucumbers on the side (very classic Vietnamese meal!).**NOTE: If you reduce sugar then the pork will not caramelise as well and it will take longer to get colour on it!**

a pot filled with rice, peas and sausage

Recipe video above. The smoked sausage is the trick here to get great flavour into this quick one pot dinner. Tastes like Jambalaya, minus the cajun flavours, and much faster to make. Everybody loves this!I used kransky sausages but you can use any smoked sausages you want, including chorizo. You can even use raw sausages - see Note 1! Also feel free to use other vegetables - anything that can hold up to 20 minutes on the stove.

a fork sticking into some food on top of rice

Recipe video above. A quick chicken dinner that's an explosion of (spicy!) Asian flavours! Make this with chicken breast, boneless thighs or tenderloins.Spiciness level: Spicy but not blow-your-head-off spicy! Remember, I like to think I'm a Spice Monster, but in reality I can't handle the heat (literally!). To dial it back, reduce chilli flakes and see Note 2 about reducing Sriracha.

a bowl filled with meat and cilantro sauce

RECIPE VIDEO above. This is a Chef recipe and is one of the easiest Indian curries to make. The Butter Chicken Sauce is so good that you will want it on tap! Many restaurants take it over the top by adding copious amounts of ghee or butter into the sauce, but you'll find this rich enough as it is.And next time, try the streamlined One-Pan Baked Butter Chicken (readers are loving it!).

a white plate topped with chicken and potatoes covered in sauce, garnished with green leaves

Recipe video above. Such a spectacular way to cook a whole chicken! Cooked in a Thai red curry sauce with potatoes and beans, the pot-roasting method keeps the chicken ultra juicy. Plus, we can get away with store bought curry paste here because the chicken juices add a stack of money-can't-buy flavour into the sauce.Easy enough for midweek, definitely impressive enough for company!

some meat with sauce and peppers in a skillet

The chicken version of the wildly popular Vietnamese Caramel Pork! It's saucier and made with coconut milk so it has a gorgeous coconut fragrance. It's sweet with savoury undertones, looks thoroughly unimpressive while cooking but then magically transforms in the last 5 minutes. Recipe VIDEO below.

a bowl filled with meat and vegetables next to rice, limes and cilantro

Recipe video above. Pan-seared chunks of white fish are coated in a syrupy, spicy lime sauce in this dish loosely based on pla tort sahm rot, a traditional Thai street stall favourite. It tastes a bit like a fish version of everybody's favourite Chilli Garlic Prawns. Very quick to make, it's loaded with big flavours!Spice level: fairly spicy but not blow-your-head-off. See Note 4 for how to control the spiciness.

a close up of a bowl of food with meat and vegetables on the top of it

Recipe video above. Vietnamese caramel sauce is a popular sweet/savoury used in Vietnamese dishes. Here, it's used for bite size chicken pieces that get coated in the glaze with a generous dose of ginger. It's quick, easy, something different and outrageously good!** NOTE: Sadly seeing reader feedback that the liquid isn't reducing and chicken isn't caramelising. Please ensure to use a LARGE PAN and be brave, simmer RAPIDLY! Else the liquid will take ages to reduce. See Note 4.**

a bowl filled with meat and vegetables next to chopsticks on top of a table

Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

a plate with some meat and potatoes on it next to a glass of white wine

A one pan meal - TWO dishes in one pan! By baking the potato gratin with chicken on top, the chicken juices mix into the potato gratin, creating incredible flavour. The chicken fat is rendered on the stove first to remove excess fat and is seasoned with a rotisserie chicken flavoured rub.
