DAINTY BITE on Instagram: "Perfect mini pecan pies are the easiest to make and so so good.
You will need:
3/4 cup toasted pecans chopped roughly
1 egg
1 tsp vanilla extract
1 1/2 tbsp butter melted or room temperature
1/4 cup dark brown sugar
1/4 cup light brown sugar
1 roll refrigerated pie crust @pillsbury
Chocolate chips/ optional
Preparation:
Toast the pecans and let them cool completely. Chop roughly and set aside.
In a clean bowl whisk the egg, vanilla then add the butter and sugars . Add the pecans and the filling is ready.
Unroll the pie crust and cut circles to fit the mini muffin tin, load with the filling and bake at 350 degrees F for 30 minutes or until crust is golden. Top with chocolate chips or leave as is and enjoy.
