Cube sweet potatoes and put in a sauté pan with oil on med-high heat. Mince 1 clove garlic and add to sweet potatoes, season liberally with salt. Chop up mushrooms and kale and add on top. Cook until potatoes are slightly crispy and mushrooms and kale are soft. Top with salt and pepper and two fried eggs. Enjoy!
