“An English bread, made with dried fruit and traditionally served sliced and spread with butter”. Aka, an absolutely delicious creation. My mum used to make this all the time when I was younger, and still does, so to me it tastes like home 🫶

▫️350g mix of dried fruit (I used cranberries, apricots, sultanas, raisins)
▫️320ml black tea (2 tea bags)
▫️225g self-raising flour
▫️1 tsp mixed spice
▫️60g soy yoghurt
▫️60ml almond milk*
▫️1 tsp marmalade for the glaze

*if your fruit doesn’t absorb all of the tea overnight and some is left in the bowl, you may not need this extra liquid when making the batter. You’ll have to judge independently!

This is a moist and fruity loaf that is delicious sliced thinly and buttered, toasted or not as you please. Plan ahead as you must soak the fruit overnight prior to baking. I use a luxury mix of fruit, which has dried currants, sultanas, raisins, dried cranberries and cherries. This loaf keeps beautifully and freezes well. You can keep it for about a week wrapped in greaseproof paper, foil or in an airtight tin.
