I am happy to have found a new way to eat green beans because it’s hard to get creative with them (even if you hold up your pinky and call them hericots verts in French, ooh lala). Problem solved here, they fit surprisingly well in this herb-y salad with spinach, peas, crunchy onions, bits of garlic and a light punch of fresh citrusy vinaigrette.
