Crunchy Coca de Vidre - 270 g pastry flour, 15 g of fresh yeast, 75 g water, 75 g milk, 1 tbsp olive oil, pinch of salt, Anise liquor, sugar, pine nuts. Prep: Heat water + milk, add yeast, dissolve. Hand mix the flour , salt, & oil. With mixer, blend further. Let sit till doubled in size. Make 8 balls. Oven @ 400 F. Roll out long and fine, place on Silipad/cookie sheet, brush on olive oil, then anise, dashes of sugar and pinenuts. Bake for 15 minutes; watch that the edges do not…
