4 beef tenderloin steaks (6 oz each) Salt and pepper to taste 2 tablespoons olive oil 1/4 cup finely chopped shallots 1/2 cup beef broth 1/4 cup brandy or cognac 1/4 cup heavy cream 2 tablespoons Dijon mustard 2 tablespoons Worcestershire sauce 2 tablespoons chopped parsley 1 tablespoon butter Mushrooms Heat olive oil in a large skillet over medium-high heat.
