I got this recipe from a community cookbook years ago - they were trying to raise money to get their community center some new flooring. It was called unstuffed cabbage rolls in the book but we call it just "Cabbage Roll Casserole". Not exactly as good as real cabbage rolls but a really close second if you haven't the time or inclination to fuss with cabbage rolls.
One-Pot Cabbage Casserole Ingredients 2 lbs. ground beef Salt and pepper or creole seasoning 1 onion, chopped 1 cup rice, uncooked 3 cabbage 1 8 oz. can tomato sauce 2 cups of water 1 14 oz. can diced tomatoes 1 cup shredded cheese season and brown ground beef and onions. , add rice, cabbage, tomato sauce, water, tomatoes Stir. reduce heat to medium low, cover,simmer for 20-30 minutes or until rice is done and cabbage is soft. top with cheese and cover with lid to melt a few minutes
Grandma didn't make these often but when she did we all loved them. Old fashioned cabbage rolls take a lot of time and have to cook for 1 1/2 to 2 1/2 hours (depending on how many you cook and how closely they are packed into the pan), so don't plan on making them if you are in a hurry. This is a dish best made by a group or family together. You can set up an "assembly line" and make a big bunch. They freeze well so we think its worth the effort.
