Wash & slice your peaches and mix them with sugar, melted butter and vanilla and set aside; 2. Lightly roll your puff pastry on a floured surface; add your filling in the centre and optionally arrange them or just spread them; fold the edges and brush eggs; wash & sprinkle coarse sugar; 3. Pop in the freezer for 10 mins to optimize puffing of your dough; 4. Bake in a preheated oven at 400 F for 30 min, broil for 2 mins; 5.
