Sourdough bread is something pretty amazing. All you need is flour, water, salt, and a little patience. Mother Nature takes care of the rest. No other additives are needed to create the tastiest bread that is available. You only need to mix a sourdough starter and start baking. You can find the sourdough bread recipes here.

Two Castle Rye, made with rye and wheat flour and covered with pumpkin seeds and oat flakes. Divided in two boules and bake together to get a big bread.

Heat the oven to its highest setting (250C/500F/gas mark 10 is ideal). If possible, have ready a clean spray bottle full of water – you'll be using this to create a steamy atmosphere in the oven, which helps the bread rise and develop a good crust. (You can achieve the same effect with a roasting tin of boiling water placed on the bottom of the oven just before you put the loaf in.)

It's been more than a month, and my croissant fever is getting hotter -- sadly, what's heating up faster is TX temperature.
