Orange Spice Chia Energy Muffins. With Maca! I made these July 2013 and loved them! I replaced Maca powder with brown rice protein powder. I also replaced dry sugar with maple syrup (reduce liquid by about 3 tablespoons). I added the optional walnuts and oats. DIY Allergen-Free Instant Breakfast. *Do not pre-cook the grains! 1 c. gluten-free oats 1/4 c. quinoa 1/4 c. flax seed 2T chia seeds 1/4 c. brown rice protein powder (optional) pinch salt  Combine all grains in a coffee grinder or food processor until fine. Mix w/protein powder and salt, store in an airtight container. To prepare: combine 1/4c of  mix with 1/4c of boiling water or coconut milk. Add sweetener, spices or dried fruits as desired. I made some delicious clean tortillas using Quinoa and brown rice flour last week and want to share this super easy recipe with you. - Watch the water amount. It might be way too much.
Brown rice flour and sorghum flour add extra protein and fiber to these tasty gluten-free, dairy-free pancakes. Top them with sliced fruit, warm applesauce or maple syrup. For convenience, mix the batter the night before, cover and store overnight in the refrigerator. In the morning, stir the batter while the griddle heats up. Don t over-mix.
