Creamy Mashed Cauliflower [low carb] - Tastes Just Like Mashed Potato! chop 1 head cauliflower. Steam or micro covered until tender (3 min?). uncover to let steam evaporate and put in food processor with pinch salt, pepper and garlic pwd and 1 T butter (or use chicken broth). Process on high until smooth. Allegedly tastes like mashed potato! (I'll let you know after I try it!)
