Scorzonera hispanica, black salsify or Spanish salsify: "The most distinctly flavored root vegetables we know. Each is delicious and can't be compared with anything else for fall and winter mixed vegetable soups and stews, or cooking alone. Produces yellow flowers in its second summer. Early and vigorous roots are long and tapered, averaging 9-11" long and 3/4" in diameter. The skin is black and the flesh is white....wide upright leaves, and edible yellow flowers the second summer."
